Do you have a lot of apples in your house, like we do? Getting tired of just eating them raw. Well, I found a great recipe in All You magazine. We had last night and it was yummy!
Pork Chops and Apples
Prep time: 10 min
Cook: 13 min
Four 1/2 inch pork chops
salt
1/4 cup flour
3 tbsp veg oil
1 shallot, finely chopped ( If you don't have a shallot, dice half a small onion)
2 large Granny Smith apples, peeled, cored and diced (I used Fuji apples and it tasted great)
1/2 cup apricot jam
1/4 cup cider vinegar
1/4 cup low-sodium chicken broth
1. Sprinkle pork chops with salt. Place flour in a shallow bowl and dredge chops on both sides.
2. Warm 2 tbsp oil in a large skillet over med-high heat. Cook chops until browned, 3 to 4 mins on both sides. Transfer to a plate and cover with foil.
3. Add remaining 1 tbsp oil, shallot (onion) and apples to skillet. Cook, stirring, until softned, 2-3 mins. Add jam, vinegar and broth; cook, stirring and scrapping up any brown bits on the bottom, until sauce has thickened, 1 to 2 mins. Pour over chops and serve with your favorite veggie and side.
