Our Garden and Canning Tomatoes

Our garden is slowly coming to an end. We only have tomatoes and peppers left. It was a good year. Lots of yummy vegetables!
We haven't been using the tomatoes as fast as we were so I decided it was time I canned some. I'm no expert in canning. It's only my second season trying it. I had just one hiccup - forgot to screw the lids on, figured that out fast. I ended up with 3 jars. It's nice knowing where your food comes from. When the rest of our tomatoes turn red I will can them too. Hopefully no hiccups next time :)

I printed mine off today and headed over to my local Kroger. I picked up 2 Luna Nutrition Bars for Women and 2 regular Clif Bars. What's for Dinner?

Food Lion has some good sales this week, in the Richmond area, where you can make a yummy dinner for very little money.

Here's what to buy:

Holly Farms Whole Fryer - 0.47 lb
5 lb bag White Potatoes - 0.99 each
Bird's Eye Steamfresh Vegatables - $1.00 each

Don't be afraid to cook a whole chicken. They are so easy. Just put a little bit of your favorite seasoning on it and put it in the oven at 375 for 1 1/2 to 2 hrs. Nothing to it, you just need time. And buying chicken this way saves money! Next cut up a few potatoes, drizzle with oil, season with your fav herbs and spices and throw on a baking tray. Pop it in the oven, with your chicken, for about 45 mins. Turn atleast once. The Steamfresh is the easiest just pop in the microwave for the amount of time it says.
So all together this meal cost $3.59. That's a 4.82 lb bird, 1/3 of the potatoes and 1 bag of veggies. Not bad for a family of 3. (We will have left overs for hubbies lunch :)

What to do this Weekend

Looking to do something FUN and FREE this weekend? Then check out Glen Allen Day it's for all ages.

The Glen Allen Ruritan Club in association with the Division of Recreation and Parks will host Glen Allen Day, one of Henrico County's largest outdoor festivals, on September 18. This year's theme is "Living Healthy." Celebrating 14 years, Glen Allen Day festivities will include a community parade at 9:30 a.m. beginning at the intersection of John Cussons Road and Mountain Road and continuing down Mountain Road to Meadow Farm Museum/Crump Park. Activities in the park include children's activities, balloons by Miss Sheri the Clown, an arts & crafts and business fair, a live petting zoo, train rides, a classic car show, and live musical entertainment featuring local musicians on two stages. Refreshments will be available for purchase at an outdoor food court.

Saving on Meat

I just got back from the grocery store and I now have a freezer packed with meat. They had a ton of meat on Manager's Special and I was able to get 35.7 lbs of meat for $27.16. That's 0.76 lb!!! Here is what I bought:

3 lbs of ground chicken
6 lbs of ground beef
20 lbs of chicken quarters (There was a whole chicken in one of the bags so I got 2 breasts too. Lucky me!!)
6.7 lbs of boneless, skinless chicken breasts (not on Manager's Special, but a good price)

What am I going to do with all this meat? Well, right now I am baking a bunch of the chicken quarters in the oven and then I will dice up the chicken and freeze them in dinner size portions in freezer bags. It makes dinner time a lot easier when you have the chicken already cooked. The rest of the quarters will be used in crock pot recipes and, our favorite, on the grill. I'm from upstate NY and our BBQ is slow grilled chicken quarters, so we have these a lot in the summer - so good! The ground beef will be used for burgers, hamburger helper, tacos. The ground chicken is also good for burgers. I don't eat hamburgers, in fact I have never had on in my life, yes I am weird. Chicken burgers are so moist and healthier. The chicken breasts will be used for BBQ pulled chicken in the crock pot and pretty much most of the meals I make.
